Our Story

Cookie time bake shop started with an idea our owner and head chef, had to make cookies with lots of high quality ingredient in interesting flavors. We tried our hardest to push the envelope in our development of our soft dough cookies are all patterned after iconic ice cream flavors. Whether you’re a classic vanilla bean fan for a chocolate peanut butter swirl fan we’ve got you covered. The soft dough cookies are loaded with chunky bits of flavor and we do not compromise on the quality of the chocolate, nuts and candy bits. Our owner also made a line of high quality classic cookies. Some recipes we decided to modernize like our cranberry walnut oatmeal cookies and other we decided not to mess with perfection like our classic peanut butter. We're sure that whatever your taste you'll find something that speaks to you.

My name is Mariah Daniels, I first got interesting in baking when I was in high school. I took home economics and fell in love with cooking and baking. I started bringing cookies and other baked good for my classmates and teacher to try. In my senior year a Nottingham High school in Syracuse New York I started the culinary club where I exchanged recipes and techniques with students and teachers. We also fund raised by selling bakes goods and hot food. I would then go on to study at Onondaga Community College and The Art Institute of Charlotte. At college I refined my techniques and learn how to push the envelope with bold flavors.

I decided to start cookie time bake shop when I couldn't find high quality cookies in the flavors I liked. I enjoy high quality cup cakes with crazy flavors but when you try to look for the same think only in cookie form you'll find that it is virtually nonexistent. I started with my pistachio chocolate ship recipe. They turned our round and not flat I thought they tasted great but looked strange. My sister said they reminded her of ice cream and to not change the shape. So I left them round and went about creating the soft dough cookie line which included chocolate peanut butter swirl, vanilla bean, cookies N cream cookies, and even strawberry ice cream. All patterned after different ice cream flavors.
